Spelt Muffins - any fruit | The Fresh Loaf

If any of you like to bake with spelt,you know it can be tricky to find great recipe's,and even trikier to alter regular recipe's,but ive been doing it long enough that i have a small collection of really great one's now...this is my latest,and i am so impressed...first i made this recipe with pumpkin,and it was a big hit,then i treid it again with bananas,blueberries,and apples....all came out delicous i was really impressed...i also added organic dark chocolate chips to the pumkin and banana muffins,and coconut to the banana also...amazing results...theres a little bit of brown sugar in the base batter,but other than that,SUPER healthy,tasty,and very versatile!!!

I also have some great recipe's for spelt pizza crust,pie crust,,and homade bread...ive tried a zillion spelt bread recipes,and finally found a winner, which can also be used for rolls and cinnamon rolls...if anybody is interested in any one these,let me know and ill post them!!!

spelt is a type of wheat grain amber...its much more easily digestible and better for you than regular hard red whole wheat,and the gluten is different...tori can out it while she cant eat regualr wheat gluten...i started useing it when i was on the blood type diet,and i can bake with it and not gain weight the way i do with regular flour...it tastes similar to wheat,but a little "nuttier" flavor
